Hi,
I've not posted in this section before, but about 6 months ago we bought a '63 plate Fiat 500 for my daughter. It was an insurance write-off after a crash that a garage repaired and then sold on. The car drives very well, but it's developed a water leak that I think is either coming from the hose from the back of the engine, the thermostat point (I think its a thermostat), the large hose from the front or the gasket where these three hoses connect. The problem is that it's not actually leaking (as in wet) to be able to pinpoint it. It's only leaking once the engine is running and then needs topping up. I've removed various bits so I can see better and the pics are here.

Should I replace the whole lot, the jubilee clips on the rear and front hoses, the gasket under the plate held by two bolts and the thermostat?

Should I use any sealant?

Certainly looks like it’s coming the thermostat!

Replace the thermostat, they come with a new gasket. Clean the mating surface throughly. Just two bolts holding it in place. 10nm is usually the standard.

Coolant coming out looks rather brown too, I would also complete a coolant flush and fresh antifreeze mix, especially if you’re unsure of the history.

I believe the clips are “use one”, just replace with general jubilee clips as it’s easier for future.

Older FIRE engine models have the temp sensor located separately. Newer models like yours it’s integrated. Check to see if the new thermostat comes with one or just swap the sensor over.

I did a bit of searching around after posting and it seems this was a regular problem.

I've gone and ordered this part :

I'm not sure where exactly it's coming out so I'll fit it and see if it retains. Thanks for the advice on flush and re-fill. I'll certainly do that then and see what happens.

Also it might be worthwhile looking at the cost difference between an OEM fiat one and aftermarket ones. I would have thought the Fiat ones would be better quality overall and not much more expensive

I think all the fiat ones are plastic housing
Some aftermarket ones are cats metal and hold up much better
 
Unless I'm mistaken you're also missing a hose clamp on the largest hose in your pictures. That could very well be your problem if true. I'd get a jubilee clip on it while you wait for your spares to arrive.

Given all the brown deposits(leaking coolant) its certainly the thermostat/pipe replace all the water when replacing, note (how old is the car?) there's a pipe behind the exhaust manifold that rusts through, the earth lead fails right near the clutch slave cylinder in that area too.
Once you've replaced the coolant you'll need to open the bleed valve be very careful with it, its easy to snap off the head
