When you reset the ECU, why not rev the engine straight away, and how should it be driven and for how long before fuel consumption is normal again??

You should never rev the engine straight away anyway! Gotta let it warm up 
Just drive normally, usually 2 tankfulls but takes longer if you do lots of short trips.

The reason I mentioned it, is as you already know I have had a 2nd hand lump fitted and I understand my mate may have rev'ed it to clear it once started as it had been on its side on the pallet..
I am currently getting around 80 miles to a tenner as opposed to 100 miles in my old lump with the knackered big ends...I have driven around 200 miles since it was fitted, at various speeds mainly around 50, but have taken her up around a ton on the motorway (Naughty Old Me) is this gonna matter to the final set up?? as I don't really understand the process of reseting the ECU..

Tom, sorry to keep banging on about it, but I know that much...but in what physical way does it make a difference, ie does the engine run richer or something initially...
Please explain why fuel consumption will be higher initially etc...

IT will revert to its factory defaults which are about right for the engine and designed to make it run from the factory with minimal fuss. these settings are usually a bit more fuel than needed and not enough ignition advance. Both contribute to making the MPG worse.
