The main grey dash is polypropylene which wont take paint and most glues struggle with the stuff. If you are good at trimming it could be leather or suede covered but don't expect it to be easy.
dont even bother attempting to paint it. I done mine in sep/oct, looked great when it was done, then the paint was destroyed by the freezing weather over xmas! its all been cleaned off now, back to the light grey colour
you can take the dash out...have to take everything in front of you off first though mate...centre console, heater vents, cd player, steering wheel, airbags, clocks, parts of the colum, fusebox ect... a lot of bolts to remember haha put them in a plastic bag with a label to remember and label each wire mate.
it is possible to spray your dash mine was 2 colours grey and light greyish colour like a cream ish horrid colour lol now its satin black XD
plastic primed:
sprayed satin black (no laquer otherwise the shine is blinding when driving):
paint 100% perfect no problems at all 3-4coats of primer does the job never had a problem tbh been done since last summer and has lasted the winter fine XD

mine lasted over 6months fine i think it was 6months lol couple coats of primer and satin black let it all dry fully and perfect XD prep is very important
It must have the right tack prep under he primer and pre-flaming the plastic can make it more sticky but risks damaging the surface or causing a striped effect.
I once did a bike luggage case but would not want to do anything much bigger.
