Technical A/C CONTROLS

Hello all,
I have just purchased an October 2020 Panda Lounge with the standard (not automatic) A/C.
The A/C works well, but I have a query concerning its operation.
I have read the owner's guide umpteen times, but cannot undertand how to turn the A/C on or off. I'm obviosly missing something...
Is it simply by turning the temperature control knob to cold? In which does that mean it's impossible to combine hot air with air-conditioned DRY air in order to demist the screen in winter (something possible in all the other cars I've had with A/C).
The other knobs concern fan speed, recycle or not, and where to send the air to, so none of these other knobs seem to answer my question.

The switch is the fan control. You push it and the light on the control knob will illuminate when on.. Push again to turn off. Great choice of car I hope you enjoy it.

No wonder I struggled to know what to do...
I've just downloaded the English version of the handbook, where for the fan speed control (E) it says:-
(E) - Fan speed and climate control system activation/ deactivation knob fig. 29 (for versions/markets, where provided). Press the knob to activate the climate control system; the LED on the knob switches on. This enables rapid cooling of the passenger compartment.

In my French versions it just says:-
(E) - Sélecteur de la vitesse du ventilateur et activation/désactivation du climatiseur (pour versions/marchés qui le prévoient).
which translates as
(E) - Fan speed and climate control activation/deactivation selector (for versions/markets, where provided).

The Italians must think the French are amazingly intuitive !!!
