If you check on the container of most hydraulic fluid, you'll find it has a maximum recommended life of 2yrs from first use, or 3yrs from date of manufacture, whichever comes first. The manufacturing date must be shown on the container by EU law.
All the reasons for changing brake fluid regularly apply to the clutch also, with the exception of fluid boiling.
