I'm in the middle of replacing the clutch on a 2005 1.2 8v LHD panda and the release bearing is cable operated. I needed the loosen the cable to get the gearbox out but now I need to put it all together and adjust it so it has the correct tension and travel.

I found a picture that states that the clutch pedal needs to have 140mm of travel between pressed and depressed I also found a picture that displayed the procedure for a seicento and that stated that the travel should be 120mm. The 140mm version is for the panda they said but not which type.

Can somebody share the correct procedure for this panda type?
 
eLearn, the genuine Fiat workshop manual has quite a few errors in it. Below is the instruction given, which does mention the 140mm, but also within the text mentions 115mm. It is likely that the 115 refers to another model, and the text has been copied and pasted from another manual. The specification box that shows 140mm is most likely the correct data.
I'd suggest adjusting to 140mm, and testing it. If that does not work correctly, adjust towards the 115, maybe in 5 or 10mm increments, until it feels right and works properly.

You can, even if you did not mark it, see where the nut has been on the slave cilinder side. I'd rebuild it with the nut in the same place. Then make very sure that the clutch completely releases when the pedal is fully depressed. Then try if the bitepoint is where you like it and adjust a little if needed.
And if that is 139 mm, 118, or whatever would not of any concern to me.

That is true, but the clutch was grinding on the rivits but did not feel like it was going out. I started the job as the release bearing started whining and when hot it would not disengage smoothly. So the assumption for now is that the previous owner adjusted the cable to get every last piece of friction from the disk. That means I do not know for sure that the last position from the nut is the correct one. So I want to use the document as a guideline and go from there makeing sure it all fits well.
