How difficult is it to swap out a Mk2/2b (188) Punto engine (1.2 8v 60hp) with another Mk2/2b (188) Punto engine (1.2 8v 60hp) that has 100,000 less kilometers?

Well if it's a duplicate engine as you suggest it should just go back in.
Check the PDF I've included with this post (attachment) and you can see what the Haynes guide has to say about the procedure. It is some scans from this book that may certainly help.
If you don't have engine hoist it's easier to leave gearbox in place. I've swapped engine two times like that, you can even do it by yourself. You should change clutch as well, both 1.2 8v and 16v clutches fit
the most difficult thing is the engine removal itself. the whole job is pretty much straight forward (you see a line that will be in the way of the engine coming out, you take that line out)
if you don't have a proper engine hoist your signing into a pretty difficult step there. even though that's a small engine it still weights around 120-140kg and its very not comfortable to hold or pull.
