Our Chrysler uconnect... erm sorry I mean our FIAT 500X uconnect system supports album photos/covers.

They are supported only when your mp3s play via a USB stick or an SD card. They are not supported via bluetooth (its possible via the correct implementation of the AVRCP profile but it seems Chrysler developers skipped that part).

Now how to do this rather simple job. If you already have album covers for your Windows folders, it means that you have a "Folder.jpg" or multiple "AlbumArt_...jpg" files. You can use those, alternatively you need to download covers from the internet (simply search amazon or google by the album name).

Now all you need is a nifty little application (which is free) called EasyTag and can be downloaded from here (Windows installer at the bottom, or Linux binaries via yum/dnf):

The above apps allow you to set album cover/art/photo per mp3 file, which is the only way that it will work in uconnect, since a single image per folder is not supported.

I usually stick with 200px by 200px images.
