I paired my last car with UConnect and I can’t remove it and I can’t pair my new car with it.

Anyone know how to do it by any chance?

You need to login via the fiat Uconnect website. You can still register your new car via the app though.
 
It allows you to see the fluid and fuel levels, also service reminders etc. Also allows a few apps to connect to the head unit, TuneIn, Deezer and a couple of others it’s a bit gimmicky other than Deezer as it plays my playlists once it’s logged in.
