Headlights cannot be removed with the bumper in place. However. it's well worth removing the front bumper anyway. (Wisdom would do the back as well :)).

On the front, there are two bolts under each front wing that are a bit awkward to reach but more importantly they eventually rust making removal into a big issue. At least get them out and treated with copper paste. Even better get the bumper off and do the same with any of the now more accessible fasteners.
Ideally avoid replacing with stainless into mild steel as it causes the surrounding steel to rust even faster. If you must use stainless make sure the threads are treated from top to bottom with antiseize paste as it helps to avoid them reacting against the steel.

The headlight wiring connector has a sliding clip, but its hard to see how it works. Ease that clip sideways and the connector will just pull off.

Is there any difference between the paint code 541 Giallo Ottimista, and Giallo Vanilla 541/A. As my mother in law's car is the former and Fiat only sell the latter (and never replied to my tweet about it...)?
 
Go to a paint specialist and quote the paint numbers. They will make up a spray can to match. It it's a metallic colour you will also need clear lacquer.
I did this with my charcoal grey Panda and the match is near perfect.

The person I mentioned had the correct colour car.. and they often buy an aftermarket kit that is better than the FIAT ones..
