Technical Temperature needle moves up and down with the engine started but not moving.

Hi, I've made a temperature test and there's a difference.
The needle doesn't dance so much as with the other dashboard but , on 92°C, it's near to hot position using FiatEcuscan.
On 95°C, the slow cooling fan started so I think I'm protected.
Sensors and dashboard have been replaced and I think things are better but the problem isn't totally fixed.

But... the needle it's not just dancing, it is way too up. It shouldn't be so up on the gauge, that's almost max. Normal position for normal working temperature is bang on the middle at the thermometer sign.
Look, this is mine, always stays there when engine is hot (working temperature). And yours... it's not ok I say.

The ecu sensor is working fine so you have to measure the one that goes to the dashboard, check the ohms value when it fluctuates, you should measure the value at the sensor connector and in the dashboard connector, perhaps the cable has high resistance and that makes the original value to be increased when the signal passes through the cables.
 
I think the cables at the dashboard are the white/grey and brown, you can confirm this by checking continuity between these and the ones from the sensor at the engine bay.
