for a few pounds you can buy a syphoning tube with a simple pump on the top. Just done it on my car to clean up the top radiator hose which started leaking.

Turkey baster then buy the wife a new one.

If you havent changed the coolant already - change it for some ready mixed stuff (like Prestone) then you just replace the amount you need from a new bottle without worrying about upsetting the mix ratio.

But to answer your question about how to 'remove a small amount' - just remove the sensor , catch the coolant in a container and then replace

Get the new sensor ready and do it quickly you will hardly loose any you could put cling film under the filler cap to slow any loss
