First off, Hope your all good.

Under my accelerator pedal is like a small metal screw with a flat head, it looks like a door stop. Which stops me pushing the accelerator to the floor.

Is there a reason for this? If i unscrew it, will my car set on fire or something?

Thats its job
If your car got a throttle cable it will stop you doing damage to throttle body etc

also you will prop stretch your cable if you remove it...
