If the boss likes buildings, although to me 'building' is a verb, therefore, if she likes 'builts', you can go round the new Scottish Parliament, which is next door to the Palace of Hollyrood House, at the bottom of the High Street.(Only tourists call it the Royal Mile)

Surely a contradiction? If I were Her Majesty, I'd be asking for a Council Tax rebate due to my view being despoiled by some crazy Spaniard's idea for a sieve!

If your planning on using the buses (Lothian Buses are the best) make yourself familiar with the routes as Princes Street is currently closed off due to the waste of public money that is the pointless trams project. Most bus stops in the city centre have electronic timetable signs so you know how long a wait you have for the next bus
If your travelling up the A1 then there's lots of wee places in East Lothian that are good for stopping off in. North Berwick has a nice beach (bit parky this time of the year) and a few shops to look around (nice ice creams).

You could try the town of Leith if you had the time, it's a little confusing though. The residents claim it's a separate town even though it shares the Edinburgh postcode. There's a nice shopping mall with free parking (Ocean Terminal) and there's the possiblilty of the water of Leith walking route.
As mentioned earlier don't even think of entering the parliment building, it's the pits to be honest, you'd be better off trying arthur's seat just next to it or you could try the supposed, "Scottish," deep fried mars bar. How such a thing could be concieved is beyound me and I'm a native of this city.
