as for dressings:

homemade salad ones i make are

equal parts lemon juice and olive oil, salt, pepper, french mustard. nice, light and fresh and tastes good on a salad with feta or similar.

you can use balsamic instead of lemon too.

I find balsamic can be very sharp if you don't get the mix just right! And it doesn't mix with the olive oil! Mmmmm feta cheese...sun dried tomatoes...nice salami....:yum:!
