Technical Baffled by multifunctional display and how to change it

Hi Folks
I've got a 2018 2.3 130 model campervan/panel conversion. I've scrutinised the manual and tried all the variables, but can't figure out how to change the multifunctional display main menu display - for example, from date/time etc to the option that displays Fuel Average/Fuel Left display.
I've tried the menu up/down arrow buttons as described in the manual, but they only seem to adjust the headlights!

Any advice very welcome

To access the set up menu (to change clock, etc) you have to press the MODE button first, the up/down arrows are then used to scroll through the menu. Long-pressing MODE will return you to the standard display.

Pressing the TRIP button on the end of the right (wiper control) stalk will cycle through the various display options (date, trip distance, avg mpg, instant mpg, etc).
