Hello:

My choke cable snapped right by the choke lever in the cabin in my 1967 Fiat 600D and will need to be replaced.

Does anyone have any useful information or steps on how to replace the cable? Will I need to remove seats etc?

I would appreciate any information anyone can provide.

Nothing specific I am afraid, but if only the piano wire type inner you may be able to disconnect at both ends and if no kinks in inner and outer undamaged, just pull inner back to towards lever direction in side car.
Then well oil inner and outer and slide new inner back to carb from inside car, reassemble and adjust.
Obviously if outer damaged in any way then replace completely.
I did have a 600 with suicide doors in the early 1970s and a 500 in late 70s but nothing recent sorry.:)
