You need to do a run collecting the data & catching it jumping to neutral.
I'm not familiar on how to do this collecting the data in MES yet, attached is one I tried whilst on ignition only, engine not running, is this what you mean? :)

An eLearn doc on servicing the Selespeed on the Alfa. It's the same type robotized gearbox. Different branding per model (Selespeed, Dualogic, Comfortmatic, F1).
Yes it has similarities but is not identical. One difference is how the clutch is maneuvered.

I took a video whilst running the Production/Self Final Calibration process, it sounds very rough, doesn't sound like it's changing in a slick way, however I wouldn't know if it is supposed to sound like this.

That sounds like what it should be doing. Hard to hear clear through a phone recording.

To get to know how MES graphs work
Click on Gearbox
(Click on Simulate)
Click on parameters
Tick parameters you want
Click on "S" over to the right - this will put the ticked parameters to the top
Click on graphs
Click on start over to right
Click stop when you want to.
-mes auto saves a CSV file to multiecuscan once you press stop.
You can have a play with (simulator)

When I put key in, turn to ignition, as expected my reverse warning bleeper sounds and reverse camera shows picture (I leave it in reverse when I turn it off as nose faces downhill on my driveway). I've never tried just to start it in gear so is this man correct in the video I stumbled across? I've never seen an 'auto N' in display.

If nose faces downhill when parking I've learnt that 1st gear is better than reverse, and vice versa. If not, the weight of the car will try to make the engine rotate backwards if the parking brake slips.

Yes, it should automatically go into Neutral when engine starts. So does my Ducato and so says my manual (in Swedish). A few rows in English from section 5.1 in the "M40 Robotized Gearbox" Teaching Guide:

Turn off in 1st as said above.
To start - ignition on allow pump to pressure
shift to Neutral
Start engine
To start in 1st - Foot on brake while in 1st gear turn to ignition allow pump to pressure
Turn key to Start & it should shift to Neutral before engine starts to turn over. You must hold the key on as there is a bit of a delay

If in Neutral when turning off the buzzer will sound.

The vehicles I work on I always leave in neutral with wheel chocks as I have them for various fixes. Leaving in neutral will not hurt them. It is a manual gearbox after all.
