I occasionally get the engine light come up, the car runs fine.

Could it be due to the egr being blanked, if the plate has burnt through would that cause the issue when it gets hot? I did put a snap on scanner and we cleared the egr code.

Would replacing the egr plate cure the issue?

Was the EGR removed from the ECU by a remapper as well?
Otherwise, blanking will throw a codelight sooner or later for sure!
I've never heard of an aluminum EGR blanking plate burnt through, but jtd performance sells steel blanking plates, just in case...
