As a brand new newby, I cannot see an existing link for towing specs for Doblo 2015 105bhp Multijet Easy 5 Door. Any experience/knowledge appreciated, specifically Nose Weights.
 
Assuming that your 2015 is the same as my 2011, the maximum permitted towing weight for a braked trailer/caravan is 1300kgs (500kgs for unbraked trailer). Noseweight limit is 60kgs.

the 1.6 is 1300kg towing capacity, if you look on the plate in the engine bay it gives the gvw, front and rear axle capacity, and the towing capacity

the nose weight is to do with the trailer not the towing vehicle, if you mean the max nose weight that the towbar can accept then I would check with the specifications of the tow bar,

The rear structure of the car determines the max. Permissible noseweight..sometimes as low as 40Kg
 
I have done a lot of towing heavy loads over the years and I am not sure I would really want 1300kg behind my Doblo with the car having such a high centre of gravity and a short wheelbase. 900-1000kg would be about the most I would comfortably try and then see how it feels as every trailer or caravan is different. I got rid of my large 1 tonne payload PRG trailer when I bought the 2011 Doblo and bought a smaller one as I knew the car wasn't going to be up to it as it was pushing the Dobby around with only a small load on it.

I have a 2015 1.6 105 Van and I pull my caravan which weighs 1245kg

Van Tows it lovely

No issues at all

I tow an old double pony trailer with mine & have done so with some weighty loads, the aerodynamics tend to get a bit daft toward the speed limit, but all in all it does well.
 
I have a 57 plate multijet 120 bph doblo and I tow a 1000kg no problem. it tows better than my old 94 Toyota previa I had with a 2.4 petrol 135bhp auto. but then it did weigh two tonnes !!.
