Hi, I have had a similar situation with the temp gauge on my 2003 2.8 JTD campervan. I changed the sensor too but it had no effect, (the temp still showed 'normal' when starting a cold engine) but after doing a search on the motorhomefacts.com forum I found that someone suggested disconnecting the cable/plug at the gauge end and it has worked.
I hope that this will work for you if you still have the problem.
