Could I call a time out ?
We all agree the OP probably needs a temp sensor looking at.
Could we also agree that
Operating without a stat is poor practice,wasteful of fuel and washes bores.
Fuel gets into sumps,degrades oil and running cool increases the amount in there whether a stat is fitted or not.
Automatic mixture enrichment whether by ecu,bimetallic strip or temp actuated solenoid valve on the carb body goes by the name 'choke' the same way people still buy 'fan' belts
Nobody really knows what exact amount of fuel in the sump causes how much long term damage but the best advice is to minimise it
We need to get a grip or we'll be putting people off coming here.

main thing running without does is makes coolant travel too fast some times meaning it can miss out some waterways, if one of them places is where the sensor is it wont get a good reading
