PROBLEMS WITH MY 1.6SX 100 HELP!

i have a fiat bravo 1.6i sx 100 everytime i take it for a ride for about 5 mins the temp goes high it goes in the middle str8 away! i dont know whats up with it! isit normal guys or is there something wrong with it... i looked at my engine today and i found out that the previous owner had took the standard air filter out mayb is that the problem? i hope you guy can help me out with this problem because i dont know if its normal or theres something wrong with it...

iv had 2 brava 1.4 and now 1.8 when its cold it takes my car longer than 5 mins to warm up and now iv got a k&n57i it takes even longer to warm up say 10 miles when its cold
