As a general rule, when fitting a head gasket do you need a sealant/silicon grease during the fit? Or does the high torque load take care of sealing issues? I'm doing my first head change on my Seicento sporting.

Do not use any sealant or silicon! Just make sure the block and head are perfectly clean and flat. Use some petrol to clean the surfaces ensuring they are de-greased and you will have no problem. The head gasket does all the sealing for you. Make sure when you re-fit the head, you follow the correct torquing sequence and angles.
Some years ago, after inspecting the valve clearances on my Fiat 127, I once put silicon sealer on the rockercover gasket...... you wouldn't believe the mess it created a few miles on...
Oil was seeping out everywhere...!!
