The handbook (from 2009) advises 5w-40 oil fully synthetic. . All the old service invoices from Fiat main dealers show 5W-30 oil has been used...........have specs changed? Which should be used??

Have a look at shell oil finder on line and go for the grade they recommend for your car.

Or comma oils oil finder

Should be what is in the book, 5W40. 5W30 does not give as much protection. Unfortunatly garages tend to do a one size fits all approach. 5W30 won't cause immediate issue in your engine, but 5W40 can cause issues in engines needing the thinner oil, so the garage carries 5W30. Can be interesting for warranty claims, garage will ignore what they do, but If you got it serviced by a independent garage with 5W30 they would probably complain about it.
Long and short is probably no harm done, but I'd insist on 5W40 from now on.

don't use 0w40!!!
The t-jet is a "performance" engine, designed with certain tolerances, use what Fiat recommends 5w40 C3.

I tought that 0w is better on very low temp, but above -25deg. Celsius is same as 5W.
So it should have no difference.

That Aral 0w40 meets Fiat 9.55535-S2 norm.
ANd also found that it has large amount of PAO base oil, and its way better than Selenia KPE and Magnatec that i use now

Mike just use a good brand 5w40. I like motul 8100 (xcess or clean if you need acea c3)

Definitely see their website, all your answers.

I'd recommend to all to read this, pretty interesting stuff. Covers all global grades etc.

Should help you decide for yourself.

I would however recommend sticking to 5w40, as recommended.
