One thing not mentioned in video (they couldn't mention everything) was the importance of the transmission fluid . The baulk ring should not often actually touch the gear cone, the speed change between baulk ring and gear cone brought about by the trans fluid film on the cone and on the fine grooves of baulk ring contact surface.
From memory with that box it is advised not to engage 5th until several miles covered- this is to ensure 5th assembly fully lubed prior to use. The box may have initially been designed 4speed with 5th added later .

Yes I have read that and also not to change to 5th before 50mph
 
Replaced the 5th gear and still a crunch
Can someone confirm if they think this baulk ring is worn
From what I’m reading it shouldn’t touch the gear but it does and putting pressure on it does not bite it

Yes the baulk ring being worn out causes the crunch.
The baulk ring taper contacts (with oil film)the gear cone to match the speeds. If the baulk ring is worn it cannot work.
 
If the face of baulk ring touches face of gear then it's totally out of spec
