Can the clutch be modified a wee bit to stop the first two gears connecting too quickly? I don’t quite know how to describe it. I’ve driven loads of different cars/vans and never noticed this before. It feels like it wants to shoot off in both 1st and 2nd gear and is very easy to stall.

Just to confirm that it is not a hydraulic issue, if you put in gear with the clutch down, engine running, does it try to stall or jerk forward if you keep clutch pedal all the way down?
If not, then has it had a new clutch fitted very recently as they can be a bit fierce until bedded in, especially if you are used to a well worn one.
This is less common these days as clutch design has improved.
A faulty clutch or oil getting onto the clutch friction plate is another possible cause.

Thanks, no it doesn’t try to stall or jerk forward when the pedal is on the floor. It’s when I’m releasing it, it seems to all of a sudden want to jerk forward. Then again in 2nd as I’m releasing the pedal. It hadn’t had a new clutch as far as I’m aware. I only bought it in August. The mechanic who looked it over for me says it’s fine but I wondered if it could be made easier to use? Maybe I’ll just have to get used to it?

It's not a clonk like a gearbox lower mounting bush worn?
A "bodge" if clutch just a bit fierce is to find a steep hill and do a few "learner driver" clutch slips pulling away a few times, it is not good practice , but make take the edge of it's operation assuming no other faults.
If you try this , don't over do it.;)
