I'm having trouble reomving the steering rack from my Cinquecento 'Sporting'. I have removed the retaining bolts from underneath and removed the bolt from the bottom of the universal joint inside the car but, although loose, I still cannot remove the rack. Any help would be appreciated very much. Thanks.

Nope, you got everything undone, it must be the clamp on the bottom of the column thats too tight.

pull the wheels about. the tie rods might be pushing it against the car.
Or -- I think it'll be the clamp -- use a screwdriver to wedge the clamp a little further apart.
