I realise it depends on their use but does anyone know on average how long / miles front brake discs should last. After experiencing a few worrying noises they reckon the discs need replacing? The cars done just over 7000 miles in under 2 years and to be fair its not driven hard. Is their anything i can do / claim on?

That is very low but as you said it depends on the driving. It could in fact be down to the low mileage as if the car is driven few miles and never used "enthusiastically" then the discs could become corroded. This doesn't happen if the car covers a fair mileage and the brakes are applied sharply now and then to build up heat and scrub off any rust.
 
Mines done 32k miles and the discs need changing on mine I realise it's more than yours but I thought that it hasn't done many miles it also have 5mm left on the pad if you want a second opinion kwik fit do a free brake check. if you do have to pay for them i would recommend EBC brakes direct
 
My gp has covered 33k and my front disks are over half warn and i am thinking of replacing them been quoted £74 for new disks and pads off ebay, posted so it won't break the bank your you to replace them if you do it your self.

If they have worn out in 7k miles that is disgusting, short journeys or not they shoudn't wear that quick my dads mg is 16 years old and has only covered 18k and his disks are fine still got at least another few years in them and that is only used for 6 months of the year.

I think you might have a case, i would take it back to where ever you brought it and explain what has happened they might feel sorry for you. I wouldn't hold your breath thought;)
