Does anyone know if it's possible to add the ASR button and it's operations to a 2011 Lounge? Presumably if it has wiring behind the dash it might be possible with a bit of an ECU learn/teach?

No. The programming is not in the ECU until around 2015.

I'm not sure that's right, I have seen some posts online suggesting cars with Hill assist and ASR buttons on 2012 cars?

May be you are right. On Panda its not on 2014 cars but is on 2016, I wouldnt hold your breath on wiring. Thet seem to not fit it for most things.
