I've been looking around to buy a Fiat Bravo (searching for a week for a good yellow one, no luck yet) but then came across a 1.8GT (not yeloow though). What are the differences between the HLX and GT?

Exactly the same.
HLX - What UK call the spec.
GT - Rest of Europe call the Spec
HLX - What UK call the spec.
GT - Rest of Europe call the Spec

Only difference is the name. The GT is what the HLX was called within mainland Europe. Other than that, they're identical.

Genuine GT Bravo's may not have headlamp washers and/or heated seats. FACT. I used to own a Genuine Bravo GT (Import).

My 1.8 HLX had neither of those either. the seat heater was broken, and the front bumper was abarth. fact.

I`ve got a GT, was a HLX before, just changed the badges as it looks better and no one around here knows what it is, and also theres another bravo owner on here that has a GT too
