500X stock tyres are 215/60R16, but "Renegade size" 215/65R16 are much cheaper. Will they fit without problems? Do I need to tell new tyre size to ECU, bodycomputer, dash etc. with Multiecuscan or other program, so speedometer shows real speed with little taller tyres?
 
215/60 R16 does 479 Revs per km
215/65 R16 does 464 Revs per km

So the is 65 doing less revs and will show / log a LOWER mileage / speed. Basically 3.2% difference

At true 70 mph the 65 tyre will indicate/log 68mph.
At your speedo indication of 70mph with the 65 tyre you will actually be doing 72mph

Check the numbers/maths yourself to be sure.

Another comparison is 215*0.6 = 129mm and 215*0.65 = 139mm so the 65 tyre has a nominal 10mm / 1cm side wall height increase difference.

From a driver's perspective here in the UK with regards to speeding offences we have a 10% + 2 limit. e.g. for a 70mph limit you should only get a ticket at 70*1.1 + 2 = 79 mph.

NOTE! The EU stipulates speedometer accuracies for homologation certification. You can look these up. Your car on 60 profile tyres could be at the upper limit of accuracy so going to 65 profile could/would reduce your margin. No car is 100% accurate on speedometer readings so you can use a SAT NAV GPS to get your true speed compared to speedometer reading. This will give you a baseline. Also tyres wear, typically from 8mm tread depth to legal limit of 2mm so as tyres wear your speedometer will read higher.

Lastly..... the rims will take either size tyre an be perfectly within rim specifications and legal.

I have checked it already with willtheyfit.com calculator and they are ~2,2mm bigger in diameter and ~8cm in circumference.
In Finland tyre can be 30mm wider, one inch bigger in diameter and 5% bigger in circumference compared to largest tyre in registeration documents.
So 215/65R16 is legal indeed.

The problem is, will they really fit without rubbing anywhere and how to calibrate speedometer.

I know some cars have possible to enter tyre size in cars body computer by driver through settings menu and some have possibility to enter it with tester, but is it possible in Fiat?

Your new tires should fit without a problem, my stock tyres are 215/60r17 in summer and 225/65r17 in winter season to get higher clearance. Also you can use diagnostic tool to calibrate speedometer, but i dont see it necessary to do, just check the speed difference with GPS and remember it.
 
I have 225/50 18's on mine which are just 0.5% smaller than what you're proposing. My speedo is spot on (having checked it with two independent GPS readings) so they should fit
