Sorry for all the questions but I don't open my car everyday and I am discovering so much.

Why would a mechanic make a hole in a headlight?
Why is this black cable all by itself like this?

I can't take the headlight off because of this :(

The other headlight is normal... the black cable is with the other cables in the connector

1) No
2) I have no idea...
I wanted to put the headlight in the oven to open and clean it inside but I can't because of this black cable.

Can you find where the other end goes? Might give an idea of what it is for.
Remove the cover, as if changing a bulb, see where the cable goes.

Thoughts
a) replacement earth to fix a bad earth problem.
b) Alarm to flash the indicators?
c) sensor for daytime running lights, to dim them when sidelamps or headlights are on.

You could always cut this cable, remove the headlight and work on it, and rejoin the cable afterwards.
When the headlight is removed and in bits, you might also find out what the cable is for.
Nothing lost huh?

It goes to the anabbaglianti/abbaglianti light.
I don't know the word in English  , oh wait it's dipped/main beam light

The only reason that comes to my mind is that this cable gets hot and might cause trouble to the other cables.
Perhaps the mechanic was aware of such an issue and decided to avoid any further trouble.

but this is really out of my depth, it's only a guess

Might have something to do with the connector on the bottom of your bodycomputer. The wires for the dipped beams tend to burn out.
There is a connector with thicker wires available (at least on E-Bay), but some "mechanics" get creative connecting the left and right (and thus causing more strain on the wire).
