just out of interest I was wondering how you go about tuning an Uno 1.0.i.e (999cc) fire engine?

Carb or Injection?

Start by making it breathe better. Stick on an air filter and exhaust.
Look at Fast Road / Race profile cams, Colombo+Bariani are good, try Gazella Racing for that.
Consider stuff like Turboing or supercharging if you really wanna modify the engine - possibly running a higher CR if you'll stay Normally Aspirated
