Is there a well illustrated workshop manual or parts book available?
I've got a Haynes manual, which as its an older one is helpful up to a point, but one with plenty of exploded diagrams or even a parts book would be very helpful.
I'm presently struggling with fitting the dynamo / fan cooling combination and there is such a large number of possible combinations of washers / spacers etc that I'm in danger of giving up on it as it seems almost impossible to get it to turn without rubbing / scraping somewhere.

Your best bet for detailed illustrations is the spare parts catalogue. This site has multiple versions for classic 500s. Some are free, others cost €15. There are also sources of Fiat workshop manuals on the web, but Haynes tend to have the same illustrations as them.
 
The Haynes manual is good for basics, but when it comes to detailed work, it can be lacking. I got a really well-illustrated car repair manual from workshopmanuals.org that includes all the exploded diagrams and parts details. It made a big difference when I was trying to figure out tricky assemblies.

It is still possible to obtain original workshop manuals on e-bay---just takes a bit if "Finger-walking"
 
I have just looked on e-bay (dialled in "Fiat 500F workshop manual), there are about 4 original "Fiat Factory" workshop manuals available at the moment , plus what looks like a good copy of the the parts manual

Yes, there are better-illustrated workshop manuals and parts books available. The factory workshop manual or OEM parts catalogue is your best bet, as they typically include detailed exploded diagrams that clearly show the correct arrangement of washers, spacers, and other components. These are far more precise than older Haynes manuals. For your dynamo/fan setup, a parts book would be especially useful to avoid misalignment issues. Look on OEM websites or platforms like eBay for scanned copies or reprints. If you share your vehicle’s exact make and model, I can point you to a specific manual.
