The more I think about it, the more I think you should "part out" that Sting (an American term). You can strip an Uno in a couple of days. Keep all the screws, bolts, and clips; you will find those really handy, much better than the tat you buy from Supercheap or Repco.
The doors, bonnet, and tailgate don't take much space to store. Bumpers are light and can be chucked in a roof space. The doors are no use to you but very useful for owners of Uno Turbos like mine

Tailights are useful - never buy a 21W bulb again!
Fusebox - never buy a fuse again...
Even the engine is potentially worth quite a lot on Trademe to a person restoring a FIAT 850. Gearbox parts should interchange with your 70 to some extent. I'm pretty certain that CV joints are the same, and brakes definitely are.
The potential savings far outweigh the $100 cost and we haven't even talked about things like tyres. Even just a single rust-free door would be worth more than $100 to me - think of the time it takes to repair a door, and $100 is pocket-money.
