i have gt front and rear calipers on my seicento at the moment but the brake doesn't feel up to scratch, im wondering if the newer punto hgt brakes will Fit front and Rear?

You have brakes capable of stopping a 134hp vehicle that's 250KG heavier than a Seicento! Unless you've SERIOUSLY upgraded the engine & insist on carrying some really HEFTY passengers the issue isn't the pad & disc size (pad swept area) so I can't see that changing calipers will make a lot of difference. The issue seem to be the capacity of the master cylinder, running four GT calipers requires more fluid than the standard two small calipers & drums -hence the long pedal travel. Todger came up with a suitable replacement larger capacity master cylinder but you will need to ask him which one as I can't remember.
Also remove/inspect the sliders once a year to make sure they move as they should otherwise the pad will only operate on one side of the disc - I had this!

I've no idea which calipers the HGT actually used.
It's also difficult to know what expectations are.
I'd recommend a return to drums at the rear. That will give you a set up which will work just fine for street conditions and anything outside of rallying or autotests. It won't have the horrible over-servoed character of many modern cars, will give you slightly more travel than the stock set up, but more feel and better stopping (if allied to decent rubber and suspension).
It's also difficult to know what expectations are.

in my other sei the brakes seem pretty sharp, a little tap and its slows pretty quick where as in this car you have to press harder for it to be that sharp, and sometimes the brake will suddenly get easier when already under pressure. The sliders have all been greased up and move freely, so the only thing i can think of is the pistons are slightly seized. Another problem i have is if i leave the car for a few hrs and start to drive the brake is very hard and i have to stop the car, give the brakes a very sharp press and there's like a click from under the dash and the brakes feel better. I've tried grasping all the linkages connected to the brake pedals.
I was only thinking about the hgt calipers as they would be slightly newer than the gt brakes.
Stopping power isn't a problem, if i whack the anchors on the abs is there and stops me almost immediately.

Could be. The click may indicate that the actuating rod has partially seized. Get it out, have a look.
The click is probably the brake link rod coming unstuck from the sound deadening under the dash?
