I'm just going through the same process today, shims were out slightly but not enough to account for just how loud the tapping was. I investigating how to flip the shims out and I noticed that the furthest right shim had died funky gunky oil around the bottom whereas the other shims had more oil. Turns out that the top oil rail is blocked on the right hand side (as looking at the engine so really the left hand side) due to lack of servicing. I poured all oil over the shim and can and it ran quiet for a few seconds and then started getting louder. I had already done a full oil flush and changed oil and found after a run the tapping quietness down to what I would expect prior to doing the shims.
My advice, check that oil rail if the car's service history is questionable.
 
Sorted today for the benefit of anyone else with as very loud tappet........ removed the oil splash bar, poked out a piece of silicone!? From bar was still blocked, air and petrol wouldn't shift the blockage was very close to spending another 37 quid that fiat wanted for a new bar when in desperation tried and succeeded to burn out the blockage with a blowtorch.
I had read before that this bar is the only source of lubrication to the cam but frankly couldn't believe it until I removed the cam and oh my word only a fiat would do it that way....
Thankfully my cam is still serviceable despite running to and from work 30 miles round trip for at least 2 weeks with little or no lubrication to one end of the cam and not much more to the other!
Check your spray bar of your tappetes become noisy to the point of knocking rather than tapping people! I still need to re shim but it's so much quieter now and I'm lucky not to have bought a car and killed the top end in less than a month
 
The real problem is that the cam cover doesn't seal reliably, so everyone uses gunk to help the gasket.
Obviously some broke off in your case.
I'm surpised it doesn't happen more often.
