Hmmm, not sure to be honest. From what I understand you remove enough until the face is flat again, so it all depends on how warped it was to begin with. I think you can be quite drastic with it, especially in the case of the 999cc FIRE which isn't in a high state of tune so that means there is little risk of the valves contacting the pistons.
As to where to get it done, any decent engineering workshop can do it. Burton I've heard are rather over priced as they are trading on their name, and I've also heard some not very good reports about them but that is just hearsay.
If you can get up to Watford (Junction 19 on the M25) there's a place in Bushey called Green and Weatherlys on Water Lane. They're a very traditional engineering workshop and have always done good work at reasonable prices. I haven't used them for a few years, but reckon that a head skim would cost something in the region of £30. Also, if it's only machining work they're doing for you offer to pay in cash and they'll probably waive the VAT
By the way SuperUno, I now have a Punto 75SX engine. Only problem is it is connected to a Punto which I'm keeping

Got to do it up and get it on the road, then see how I like it. If I don't like it, then I'll buy a Punto 60 engine, swap them over and transplant the 75 engine into my Uno
