The brown, blue and yellow/green wires look to be mains 240volt on the left possibly from a mains hook up for when on a site connected to an external power source , no idea about the others, if it is not easy to check back where they come from, it would be a good idea to have a qualified electrician to check it out and possible the rest of the wiring as it looks a bit dodgy.

am no sure they are as it hooks up to the power supply without them connected to anything

It depend were they are coming from , I would follow the wiring back to source and test it.
Caravans an older motor homes had Zig boxes which controlled the power source and reduced 240volt down to 12volts etc for some electrical stuff that needed it. Often fridges were "3 way " so they could be powered from a 12 volt source when driving and when parked could either hook up to an exterior 240 volt supply or the gas could be turned on and the fridge pilot lit so fridge would run on gas. etc.
As I say if uncertain have qualified electrician check it out.

As @bugsymike has suggested the brown, blue, and green/yellow are 230V live, neutral, and earth respectively. They need to be connected to the 230V mains distribution unit, either via a connection unit, or a dedicated plug and socket, which would make any future removal for servicing much simpler than a connection unit.

The red and white are the 12V fridge element supply, and should be connected to a fridge designated D+ controlled 12V output on the 12V distribution board. Fuse should be 20A maximum, and cables should be generous, say 4 sq mm. This element corresponds to the "12V" selection on a manual 3 way fridge, and the D+ control ensures that it is only supplied when the engine is running. (D+ was historically a connection to the alternator field which only becomes live when the engine (alternator) is running. On x250 Ducatos, the control signal may be obtained from a special connection panel at the base of the RHS B pillar. There are is at least one other method in use.

The violet and black are usually the permanent 12V control supply (violet +ve) for the fridge control electronics. This supply must be available 24/7 when the fridge is in use. Usually obtained from another dedicated output on the 12V distribution board, and should remain live even if the board is switched off. This supply is used for ignition when the fridge is running on gas, and for general control.

On my Dometic RM7361 fridge, I think (subject to checking) that all three cables are extensions from terminal blocks on top of the fridge, which are inaccessible when fridge is fitted in the vehicle.

The fridge is probably of Dometic manufacture. An internet search quoting the make and model number, should lead to a downloadable manual.
