Bit of a long shot as I came across this on a Fiat Ulysses with a Peugeot engine, but there was an metallic fine filter on the outlet of the high pressure pump to the fuel rail that was partially blocked with ultra fine metal particles. It did exactly what yours did on long journeys. Replacing the filter cured the problem, but it took forever to find out what the cause of the problem was. Couldn't say if these engines have a similar filter arrangement.

If it says sensor fault and its a new one, then it might be that the wiring to it is damaged, only giving intermittent connection. Trace the wiring back to the ECU and pay particular attention to any connectors.
