What we did back in the day is remove the printed insert from the dials and carefully scratch the coloured filter off the translucent bits and then change the bulbs to whatever colour LED you wanted ..
Any mistakes will let light shine through where you don’t want it too
You usually had to remove the needles from the dials so getting them back in place so the speed, rpm engine temp and fuel gauge would read correctly was very hit or miss.
Generally if you feel comfortable doing that, bearing in mind the PCB on the back of the dials is a thin flexible film on modern cars and can be easily damaged just from handling it on older cars, then that is the route you will need to take.
On a car I owned I just fitted really bright blue LED which overwhelmed the very light tint and shine through blue, but that is not going to work with white LEDS back in the early 2000s you could buy a huge bag of Blue LEDS from China for about £7 and you just worked through the bag will you found one that would work or not immediately burn out
