What I find though is if you spray anything on wipe it evenly across the dash right away or else you end up with large marks where the cleaning product has been concentrated on the dash. They fade after a day or two or you can polish like a madman to get rid of them there and then.
I use turtlewax interior cleaner and it works great. I also keep a packet of halfords dash wipes (like babywipes) in the car. They are fantastic for a 30sec quick wipe over if the dash is ever loosing it's look until you get to clean it properly again.
I also find taking a damp cloth over the entire dash every couple of weeks and them buffing it dry with a towel removes all the hiden dirt and makes polishing it alot easier.
The most important thing is spray and wipe. Don't spray then go looking for where you dropped the dusting cloth. Even after 10 or 20secs any cleaner/polish will leave the mark on the dash. Spray and wipe and it'll be easy to keep looking good
I use a product called Areospace 303..... leaves a natural like new dash .. not all shinny..... nice and mattish..... I also sometimes use a product called Valet pro Protectant
