I always take the live off first so the electrical systems have an earth to dissapate down, dose'nt really matter though.

that's exactly why you shouldnt take the live off first, any sparks during removal can earth through the circuit back to battery, possibly causing damage to microelectronic components.

if you disconnect the earth first, all electrics are isolated from battery and you can then take the live off with far less chance of sparking. all electrics are still earthed to chassis so dissipation still happens even with battery isolated.

Reset ecu?, what does this do?, i just got the car back on the road and it had no battery for 3 weeks is this the reason why the fuel consumption has gone though the roof atm, well its started to head back to normal but not at the 42mpg as yet.
Am i correct in thinking this could effectively clear a fault on a rough running car?. sorry if these are dumb questions.

How's it going to spike? Its earthed still.

if you get sparks at the battery terminal as you remove it, that will send spikes down the live. if the chassis is still connected to the battery at that time, the spikes wil have a clear path back to battery through anything that is permaneltly live. if the battery was isolated from the chassis when the sparking happens the spikes do not have a clear path back to the battery which reduces the likelihood of damage.

no it wont clear a fault. if the car runs rough you need to fix something. once a fault is repaired the ecu will eventually clear the fault code from memory itself (after a certain number of ignition switches without the fault reported to ecu)
