Hi all. We have recently bought a camper on a fiat ducato base. Hearing horror stories of adblue tank being “sucked in” due to a vacuum caused by no vent hole in the cap. Would you advise we drill one in the cap or would this cause further problems to the adblue itself (more crystallisation etc)? Thank you

Fiat made a change to the adblue cap post 2021, and you should check which cap you have.
Secondly, I wouldn't risk making holes in any filler cap whilst van is under warranty.
Mine is Oct '22 17,000 miles and not a problem. No vacuum, no crystallisation, never "filled" and original cap. Read your manual.
