Technical 2004 temp gauge issue

I have the common issue where when you turn the ignition the temp gauge moves up and down before settling to the left. I have just changed the double relay and its still the same. What else can cause this issue? The van starts and runs fine without any issues.

So, I managed to change the coolant temp sensor but my problem still exists. Temp gauge not given a reading.

However, when connect my new sensor the temp gauge went up to 70 degrees straight away. Steadily climbed when the engine was running. I turned off the ignition and started the engine again. Then the temp gauge stopped working again.

Is there anything else I could change to resolve this issue? The wiring has been checked and is all ok. Could it be the actual dial that's causing the issue?
