As above or just remove it completely, that what I did on my Cinq and never had any issues, well apart from it was never over 70ish Deg lol.

Does a lot of long term engine damage though (bore wash due to overfuelling) and can cause hot spots in the head due to lower water pressure. Even the (relatively few nowadays) track cars running without a stat will use a blanking plate with a hole in it to maintain a pressure gradient.
