Without the extra wheel arch extensions wouldn't 7" wheels protrude rather illegally from the outside of the wheel arches? also is it advisable to put wheels that wide onto the steering wheels?... wouldn't they hit all kinds of things in the wheel arches?

Depends on the offset, you may have to use wheel spacers, but they kill wheel bearings.

Sorry; but you would have to use spacers and flair the arches a little.
It will reduce your wheel-bearing's life by around 40%.
It all depends upon your wealth ...................
