I am anxiously awaiting the arrival of my 1962 Fiat 500. ( I have not seen it in person.)

I am a little worried about being able to drive it. I am 6' 6" tall (198 cm). Will I be able to fit in this thing? If not, how hard is it to reposition the seat so I will fit in it?
 
It's usually not headroom that I have a problem with. Instead, my legs get tangled around the steering wheel. That's why I'm hoping to be able to move the seat farther back than it normally goes.

If you play around with the seat-slider "stop", you can move the seat a back further back. I regularly have 6ft 5in people (usually men who have been flapping their gums about not being able to fit into my car) sit in my "wee beastie"----the record was a 6ft 7in guy, but I have to admit his head was touching the roof! If it not too stupid a question---why did you but such a small car, knowing your "leg-room" problem, without even trying it first of all?
 
The reason is: I always wanted one.

I have had a series of cars that I theoretically wouldn't fit in.
I have always been able to adjust them to my needs. I assume that I will be able to fit (comfortably?) in my new Cinque Cento.

Is the seat slider "stop" the biggest tab on the right hand slide? It looks like I can either grind that off or reposition it.

Yes, the "end-stop" is the large tab, on its own, on the lower of the seat runners in the picture of the seat runners. If you are not worried about not having "an original seat" for the driver, a variety of 'bucket' seats are available with their own runners---this might be an easier solution to your problem

I have a small bucket seat that has been used before. However, I'd rather keep the original seat.

It looks like bending or removing the seat stop is the first step to see if I fit in this car.

I haven't tried, but it looks like overriding the stop, you'll run out of slots for the adjuster and get more legroom than you bargained for...
