Your gasket has certainly gone if you experience high water consumption without visible leakage. A sure sypmtom is the oil level rising, and oil is troubled, making an emulsion with water.
DIY gasket replacement is relatively easy to do, but some care is to be taken, you should get a workhop manual as like Haynes Autobook. You need absolutely have a torque wrench, the tightening torque and bolting sequence are very critical. I kept a garage in France, so I advise you strongly to leave the head to be controlled for seating plane deformation. The head being made from light alloy, this is frequently distorted and the seating plane needs in 90 % of ceses to be machined, otherwise the gasket failure will fast occur again. For the same reason, it's NOT recommended to refill the cooling system with water, but with appropriate coolant to avoid corrosion.
If you cannot obtain torque values, I have the settings in archives.
It may be advisable in the same time to replace the timing belt, as it is needed to remove it for head removal.
If water has mixed to oil, yo'll need to drain the oil two or threee times.
